{Awesome Yumminess} Italian Dressing

Sour cream. Mayo. Ranch. Blue Cheese dressing (mmm…blue cheese dressing…damn it, now I want to hit up our favorite steakhouse). Hubster has declared that the “white goopy condiments” make up a food group in my world. As much as it pains me to publicly admit this, he’s right. Yes. You read that right. I did, in fact, just admit right here on the internet, where it will be captured for eternity, that my husband is RIGHT about something.
I make these admissions to you so that you will understand what a big deal it is for me to rave about this dressing. And rave about it, I do. It is delicious. Admittedly, I don’t use it on lettuce salads (sorry, folks, that always requires one of my trusty white goopy food group condiments), but it is amazing with pasta salad. And it makes for a very tasty marinade for chicken and pork. And for those weirdos people who don’t like the white goopy condiments, I’m sure it would be delicious on a nice dinner salad, too. 
INGREDIENTS:
1/2 Cup White Vinegar
3/8 Cup Water
1/4 Cup Sugar
2 tsp Garlic Powder
2 tsp Salt
1 Tbsp Dried Parsley
1 Tbsp Italian Seasoning
1 Cup Extra Virgin Olive Oil
*Makes approximately 2 cups of dressing*
Mix all ingredients, except for the olive oil.

Stir in olive oil.
That’s it!
Simple. Easy. Done. Delicious!
*The dressing will separate as it sits. Just give it a good stir/shake when you’re going to use it, and it will be good as new.

I love Italian dressing, but never made it at home. I am a weirdo (yup I will admit to being a weirdo) that prefers Italian over white goopy usually. I like ranch as a dip, I like blue cheese on hot wings, but when it comes to my salad I am usually a Italian kind of chick. I do like Creamy Italian – it is white goopy!
I will have to try this, I have all the ingredients but the olive oil. I don’t cook with olive oil so I don’t have it on hand. Yup I told you I was a weirdo :)

Really?! That’s all it takes. I have all of those ingredients in my cabinet and have been wanting to make pasta salad for awhile. Not to mention that we don’t like any of the regular italian dressings. Awesome!
Yes, really! That is ALL it takes. I’ve never been a huge fan of Italian dressing myself, either. Hubster loves it as a marinade, though. Now that I’ve got this homemade version, I really love it, too. I hope you’ll try it, and let me know what you think of it.
I love homemade salad dressing but I hardly ever make it! Thanks for the reminder. I think I’ll try it this weekend!
