This is an easy-to-make and tasty dessert that is an especially big hit during the hot, summer months.  It was fondly dubbed “Purple Shit” by a former co-worker of mine, when I brought it for a potluck.  He kept raving to me about the “purple shit” someone had brought, and it took most of the day before I realized it was my dessert he was talking about.  Don’t worry if yours isn’t purple.  The day that it earned this name is the only time it’s ever been purple when I’ve made it.  Even still, it will now forever be referred to as”purple shit” in our house.

 

INGREDIENTS
2 Angel Food Cakes
1 Large box of raspberry or strawberry Jell-o
1 Large tub of Cool Whip
2lbs Frozen mixed berries
Sugar
Lemon or lime juice

DIRECTIONS

Stir about 1/4 cup sugar and 2 Tbsp of lemon or lime juice into the frozen berries and allow them to thaw.  Drain and reserve the juice off of the berries and set aside.
Prepare the Jell-o, as the package directs, substituting the juice from the berries for as much of the water as possible (the amount of juice will vary…just use as much as you have and use water for the remaining amounts needed)
Stir half of the tub of Cool Whip into the liquid Jell-o

Stir the thawed berries into the Jell-o/Cool Whip mixture

Cut the Angel Food cakes up into small chunks

Pour the Jell-o/Cool Whip/Berries mixture over the cake and refrigerate.  Allow to set at least four hours, preferably over night.

Before serving, top the dessert with the remaining Cool  Whip
